Mom's Fresh Salsa

A simple and delicious tomato salsa, perfect when tomatoes are in peak season.  Great for tortilla chips and any Mexican dish that needs a bright topping.

  • 5 ripe, on the vine tomatoes
  • 1/2 purple onion chopped
  • 1/2 yellow chile seeded, and minced
  • 1 clove garlic minced
  • 1/3 bunch cilantro chopped, leaves only
  • 1 tsp granulated garlic
  • salt to taste
  • fresh cracked black pepper plenty, to taste


  1. Dice the tomatoes and place them into a strainer over a mixing bowl.  While you are chopping the other ingredients the tomatoes should give off 1/2 c. or so of liquid. (Enjoy the fresh tomato juice as a drink or discard it)

  2. Dice the onion, and mince the garlic and the chile.  If you want a spicier salsa do not remove the seeds or the white membrane from the yellow chile.

  3. Mix the strained tomatoes, onion, yellow chile, garlic, cilantro, and granulated garlic in a mixing bowl.  Taste and adjust seasoning with salt and plenty of fresh black pepper.  Keep tasting and adjusting until its perfect adding more cilantro or chile if necessary.
