Lemon Poppyseed Dressing

  • 1/2 c. silken tofu
  • 6 Tbsp apple juice concentrate thawed
  • 4 Tbsp fresh lemon juice
  • 1/2 Tbsp shallot minced
  • 1/2 Tbsp dijon mustard
  • 2 Tbsp plant milk
  • 1 tsp lemon zest
  • 1 Tbsp poppy seeds
  • pinch salt (optional)


  1. Place tofu, apple juice concentrate, lemon juice, shallot, dijon, and plant milk in a blender and blend until smooth.

  2. Add in the lemon zest, and poppy seeds and stir.

  3. Optional (season with salt)

Recipe Notes

* This recipe is a mild sweet dressing, if you want more acid, feel free to add more lemon juice.  Or more shallot and mustard for more zip.  You can also add more tofu if you want a thicker creamier dressing.
