Fig & Berry Energy Bites

 Inspired by two of my favorite childhood snacks, Fig Newtons & Strawberry Pop-Tarts, these sweet and chewy snacks are loaded with nutrition and taste delicious.  With just 6 ingredients they are simple and perfect for a quick bite on the go!

  • 8 dried figs (I like the Smyrna variety, but Mission will also work) stems removed
  • 6 medjool dates pits removed
  • 1 1/3 c. rolled oats
  • 3/4 c. unsweetened coconut flakes
  • 1.5 tbsp. cacao powder
  • 1 c. freeze dried strawberries


  1. Place the dried figs into a heat-proof glass and cover with boiling water.  Let sit for 20 minutes. (You will only be using the hydrated figs, so enjoy the tasty sweet water as a little pick me up!)

  2. In a food processor, add the freeze-dried strawberries, coconut, and cacao powder and blend until combined and powder-like.  

  3. Add in the hydrated figs, dates, and 1 c. of the oats.  Pulse until the mixture starts to become sticky and combined.  Once it is mostly combined add in the remaining 1/3 c. oats and give it a few more pulses until a ball forms.

  4. Using a  heaping tablespoon or a baking scoop, scoop out equal portions of the mixture onto some parchment paper.  Once the entire mixture is portioned lightly dampen your hands and roll each ball in between your palms to form smooth balls. Place into a storage container and freeze or refrigerate until you are ready to snack!

Recipe Notes

  • Depending on the size of the scoop you can get anywhere from 15-22 balls.  So it's up to you how big or small you want them.
