My name is Rachel, and it’s is wonderful to meet you. I am a Vegan Chef and aspiring blogger.
This site is a space for me to share my passion for plant based living. My goal is to inspire and motivate others to take back their health and be confident and powerful forces in their kitchens. We will explore meal planning, kitchen skills, shopping hacks, preparations, and how to build a plant pantry. From simple quick meals to elaborate dinner parties. And prove to everyone that plants are powerful medicine that you can never get enough of.
The tips and recipes that you will find on this site revolve around mostly WHOLE plant foods. What does this mean? Mother nature created the absolute perfect package of nourishment for humans in plants. In their whole form, or the closest to how something was harvested, food has the perfect package of water, fiber, macro-nutrients (carbohydrates, protein, and fat), and micro-nutrients (vitamins, minerals, phyto-chemicals, and antioxidants). In this state our bodies can utilize the fuel and get proper satiation, which means we can eat in ABUNDANCE because our bodies will naturally tell us when to stop. When we begin to break down the food into unrecognizable substances, not only do we loose the complete nutritional package with the important fiber and vitamins, we increase the amount of calories which means we have to eat more to feel satiated.
I understand that with cooking, comes the natural progression of breaking things down out of their whole form. As long as the majority of my dishes are as close to nature as possible, I know I will feel my best. I do use sauces, some lightly refined grains, and a small amount of sugar but as flavoring agents, not large components of my meals. I always strive to be on the whole side of the spectrum of plant based foods. And that’s all I think we can do, none of us are perfect, but when we know the facts and have felt the benefits of eating this way, it’s hard to go back. I love eating, everything about it, and most people I know share that feeling. Eating mostly whole unrefined plant foods gives you the freedom to EAT, seconds, thirds, you name it. This lifestyle gives you the ability to break habits of restriction while fueling your body to give you energy to take on your day.
